The Advanced Diploma of Hospitality Management is a two-year qualification that prepares you for supervisory and management roles in hotels, resorts, restaurants, events and food and beverage operations. You study how a venue actually runs: rostering and labour costs, stock control, food safety, responsible service of alcohol, budgeting, marketing, and leading a team through a busy service. Assessment is practical as much as written, so you spend time in training kitchens, simulated service environments and on placement with hospitality employers.
Australian vocational qualifications are built from units of competency, each carrying credit points. A full-time load is usually eight units a year across two semesters, with some providers running trimesters. The advanced diploma sits above the diploma on the AQF and typically includes a work-integrated learning component, a supervised placement in a hotel, restaurant or events business, plus a capstone unit where you plan and manage a real function or venue project. You can often enter after Year 12, after a diploma, or with relevant industry experience and credit for prior learning.
Skills you come out with are specific: writing a roster that meets an award, costing a menu, running a stocktake, handling a complaint at the pass, briefing a team before service, and reading a profit and loss statement for a food and beverage outlet. You also learn the compliance side, liquor licensing, food safety standards, WHS and workplace relations, which is what separates a manager from a good shift supervisor.
